Vellarikka Pulincurry recipe



Ingredients :

1. Cucumber - 1 medium size 
2. Water - 1/2 cup
3. Turmeric powder - 1/2 tsp
4. Mustard seeds - 1 tsp
5. Curry leaves - 1 sprig 
6. Red chilli - 1
7. Fennel seeds - 1/4 tsp
8. Oil - 1 tsp
9. Salt to taste

For grinding:

1. Grated coconut - 3/4 cup
2. Turmeric powder - 1/2 tsp
3. Green chilli - 2 nos
4. Cumin seeds (small one) - 1 tsp
5. Curd - 1/2 cup

Steps to follow:

1. Pressure cook cut cucumber, 1/2 tsp turmeric powder, salt by adding 1/2 cup of water for one whistle.
2. Grind 3/4 cup grated coconut, 1/2 tsp turmeric powder, 2 green chilli, 1 tsp cumin seeds and 1/2 cup curd to a smooth paste in a mixer grinder.
3. Add the smooth paste into the cooked cucumber and add 1/4 cup water (if curry is too thick can add little bit more water) then boil it in low flame for few minutes. Remember not to boil the curry for long time. Check the salt and add if needed.
4. In a pan splutter mustard seeds then add fennel seeds, red chilli  and curry leaves. Then pour tampering into the curry.
