Green Amaranthus Stir Fry - Cheera Thoran

Ingredients:

1. Green Amaranthus / Cheera - A large bunch

2. Grated Coconut - 1 Cup

3. Small Onion - 4-6 nos

4. Garlic - 4 cloves

5. Dry Red Chilli - 2 nos

6. Curry Leaves - 1 sprig

7. Turmeric Powder - 1/2 tsp

8. Mustard Seeds - 1 tsp

9. Oil - 3 tbsp

10. Salt to taste


Steps to follow :

  1. Clean and wash  Amaranthus thoroughly and chop them up finely.
               

2. Heat 3 tbsp oil in a pan add mustard seed and wait until mustard pops then add chopped Garlic, Red Chillies, Curry Leaves, Chopped Small Onion. 

3. Once the Small Onion has lightly browned, add Chopped Amarantus, Turmeric Powder and add salt to taste. 

4. Cover the lid and keep it in low flame for few minutes.  

5. Once the Amarantus is cooked completely then add grated coconut and stir fry for another two minutes.

Tasty side dish for rice is now ready to serve...!!!




Note :
     1. Do not add water while cooking.
     2. Do not cook for long time otherwise Amaranthus will loose its greenish color.
