Ingredients:
1. Sooji - 1 cup
2. Urad dal - 1/2 tsp
3. Onion - 1
4. Carrot - 1 (chopped)
5. Green chill - 1 or 2
6. Ginger - 2 tbsp finely chopped
7. Grated coconut-1/4 cup (optional)
8. Water - 2 cups
9. Mustard seeds - 1 tsp
10. Curry leaves - 1 sprig
11. Salt to taste
12. Oil - 2 tsp
Steps to follow :
1. Take a pan and dry roast 1 cup sooji on low-medium flame for 2-3 minutes, then allow it to cool.
2. In another pan heat 2 tsp of oil and add mustard seeds. Once the mustard seeds pops up add urad dal then add finely chopped onion, chopped carrot, finely chopped green chilli, curry leaves, finely chopped ginger and saute until the onion becomes brown.
3. Then add 2 cup water into it and add salt (now only we have to add required salt later we cannot add). Let it boil for few minutes on high flame so that carrot should be cooked.
4. Add fried sooji little by little into the boiled water by stirring continuously without forming lumps.
5. Then cover with a lid and keep in low flame for 2-3 minutes (by that time sooji will absorb all the water and will become dry) and switch off the flame.
6.Open the lid, add grated coconut (optional) and stir well to break the lumps.
7. Serve upma with banana or sugar.
