Carrot Beans Thoran Recipe/ Carrot Beans Poriyal/ Carrot Beans stir fry


Ingredients:

1. Carrot - 1/2 cup(chop into small pieces)
2. Beans - 1/2 cup(chop into small pieces)
3. Small Onion - 4-6 nos
4. Grated Coconut - 1/4 cup
5. Green Chilli - 1 or 2 nos
6. Turmeric Powder - 1/2 tsp
7. Curry leaves -1 sprig
8. Water - 5 tbsp
9. Mustard seeds - 1 tsp
10. Oil - 2 tbsp
11. Salt to taste


Steps to follow:

1. Heat  2 tbsp oil in a pan, splutter mustard seeds and then add Curry Leaves, Chopped Small Onion, Chopped Green Chilli. Then stir it for few minutes until small onion becomes soft and translucent.
2.  Add chopped Carrot, chopped Beans  along with Salt and Turmeric Powder and Stir it well.
3. Add 5 tbsp of water and cover the pan with a lid and cook for five minutes in low flame.
4. Uncover the pan and check whether the carrot and beans are properly cooked. if it is not done sprinkle little more water then cover and cook for another 2-3 minutes.
5. Once it is properly cooked and all the water evaporated add Grated coconut and stir for few minutes and switch off the flame.

Carrot Beans Thoran is ready to serve with Rice...!!!
